🛒 Ingredients
For the BBQ Salmon:
  • 4 salmon fillets (about 6 oz each, skin on or off)

  • 3 tbsp BBQ sauce (your favorite — smoky or honey-based works great)

  • 1 tbsp soy sauce

  • 1 tsp honey or maple syrup

  • 1 clove garlic, minced

  • Juice of ½ lime

  • 1 tbsp olive oil

  • Salt & pepper to taste

For the Mango Jalapeño Salsa:
  • 1 ripe mango, diced

  • ½ red bell pepper, finely chopped

  • ½ jalapeño, minced (seeded for less heat)

  • ¼ cup red onion, finely chopped

  • Juice of 1 lime

  • 1 tbsp chopped cilantro

  • Pinch of salt

For the Bowl:
  • 2 cups cooked jasmine or basmati rice (warm or room temperature)

  • 1 cup shredded cabbage or coleslaw mix

  • 1 small avocado, sliced

  • ½ cup edamame (optional)

  • Extra drizzle of BBQ sauce or sriracha mayo for topping

👩🏻‍🍳 Directions
  1. Marinate the Salmon:
In a small bowl, whisk together BBQ sauce, soy sauce, honey, garlic, lime juice, and olive oil. Pour over salmon and let it marinate for 15–20 minutes.

  2. Make the Salsa:
Combine mango, red pepper, jalapeño, red onion, cilantro, lime juice, and salt. Toss and chill until serving. (The flavors get even better after 10–15 minutes!)

  3. Cook the Salmon:

    • Oven method: Preheat oven to 400°F (200°C). Place salmon on a parchment-lined baking sheet. Roast for 12–15 minutes, brushing once more with marinade halfway through.

    • Pan-sear option: Heat a skillet over medium-high, cook 3–4 minutes per side until caramelized and just cooked through.

  4. Build the Bowls:
Spoon warm rice into bowls. Add shredded cabbage, edamame, and avocado slices. Top with BBQ salmon, a generous scoop of mango salsa, and an optional drizzle of BBQ or sriracha mayo.

  5. Serve Immediately:
Sprinkle extra cilantro or sesame seeds if you’re feeling fancy.

❤️ Sunday Tip

For a meal-prep win, make extra mango salsa — it’s incredible on grilled chicken, shrimp tacos, or even spooned over scrambled eggs. You can also swap rice for cauliflower rice or quinoa for a lighter version.
