  • 2 tbsp tomato paste

  • 3 tbsp flour

  • 1 cup dry red wine (optional but lovely)

  • 4 cups beef broth

  • 2 cups water

  • 4 large carrots, peeled and chunked (leave an extra whole for an appetizing appearance!)

  • 3 potatoes, peeled and cubed

  • 2 celery stalks, sliced

  • 1 tbsp Worcestershire sauce

  • 2 tsp dried thyme (or a few sprigs fresh)

  • 1 bay leaf

  • 1 cup frozen peas

  • Fresh parsley, chopped, for garnish

1. Brown the beef.

Pour in red wine, scraping up the browned bits. Simmer for 2–3 minutes, then add broth, water, Worcestershire, thyme, and bay leaf. Return beef to the pot. Cover and simmer on low for 1½ hours.

4. Add the vegetables.
Stir in carrots, potatoes, and celery. Cover and cook another 45–60 minutes, until everything is tender and the sauce thickens naturally.

5. Finish strong.
Remove the bay leaf. Stir in peas and simmer 5 minutes. Taste and season as needed.

6. Serve with love.
Ladle into warm bowls, sprinkle with parsley, and serve alongside crusty bread or mashed potatoes.
