🍅 Creamy Pasta Soup with Tomato & Herbs
Silky, savory, and soothing — a cozy bowl that feels like a hug.
🛒 Ingredients (serves 3–4)
2 tbsp olive oil
1 small onion, finely chopped
2 cloves garlic, minced
2 tbsp tomato paste
3 cups low-sodium chicken or vegetable broth
½ cup tomato purée (or crushed tomatoes)
¾ cup small pasta (like ditalini, elbows, or mini shells)
½ cup heavy cream (or half-and-half for lighter texture)
½ tsp dried oregano
Salt & pepper to taste
Fresh basil or parsley, chopped (for garnish)
Optional: grated Parmesan, chili flakes
👩🍳 Directions
Sauté aromatics: Heat olive oil in a medium pot over medium heat. Add onion and cook until soft, about 3 minutes. Stir in garlic and tomato paste; cook 1 minute.
Add liquids: Pour in broth and tomato purée. Stir to combine and bring to a gentle simmer.
Add pasta: Drop in your small pasta and cook until tender (check package time).
Finish: Reduce heat to low, stir in cream, oregano, salt, and pepper. Simmer gently 2–3 minutes — don’t boil.
Serve: Ladle into bowls, top with fresh herbs, a sprinkle of Parmesan, and a swirl of olive oil.
❤️ Sunday Tip
Add a handful of spinach or kale just before serving — it melts into the soup beautifully and adds color and balance.
