🛒 Ingredients (serves 3–4)

  • 2 tbsp olive oil

  • 1 small onion, finely chopped

  • 2 cloves garlic, minced

  • 2 tbsp tomato paste

  • 3 cups low-sodium chicken or vegetable broth

  • ½ cup tomato purée (or crushed tomatoes)

  • ¾ cup small pasta (like ditalini, elbows, or mini shells)

  • ½ cup heavy cream (or half-and-half for lighter texture)

  • ½ tsp dried oregano

  • Salt & pepper to taste

  • Fresh basil or parsley, chopped (for garnish)

  • Optional: grated Parmesan, chili flakes

  1. Sauté aromatics: Heat olive oil in a medium pot over medium heat. Add onion and cook until soft, about 3 minutes. Stir in garlic and tomato paste; cook 1 minute.

  2. Add liquids: Pour in broth and tomato purée. Stir to combine and bring to a gentle simmer.

  3. Add pasta: Drop in your small pasta and cook until tender (check package time).

  4. Finish: Reduce heat to low, stir in cream, oregano, salt, and pepper. Simmer gently 2–3 minutes — don’t boil.
